I have little to add to the many reviews I have read, except to call out the world-class lousiness of the index. It is general where it should be specific. There is no recipe for butter, but it's used in a lot of recipes so, guess what? There are about 50 references to butter, most if them, if not all, useless to the reader.


This book used some sort of automated indexing system, which is always a good start if you begin with a good list of terms, but without subsequent careful editing, you end up with this mishmash nightmare that is practically useless. That said, once I find the recipe I'm looking for, the food turns out great. So I give it a reluctant 4 stars. I have more than cookbooks, but I never shelve this one because I use it so frequently. I wish this book was available on Kindle, so I could find everything quickly.


This book is an excellent introduction to sous vide cooking. It has the science info, it has the safety info and it has very useful cooking times and temperatures for many different proteins, fruits and vegetables. These things alone make the book invaluable. The recipes I've tried work, sometimes quite well. But the approach here is not that of a chef.


Baldwin most of the time takes a "let's cook the main ingredient first and after it's done we'll sauce it and give it its individuality. This happens with a lot of the red meat recipes, too. I look forward to a sous vide cookbook that has moderately involved recipes where multiple ingredients are combined in the vacuum pouch and they are cooked all together to totally infuse the flavors into the primary ingredient, not just a cook the protein and then paint it with sauce approach.


But that book is mostly to the other extreme with recipes the home cook won't or can't deal with in their complexity, but some are simple and wonderful, sous vide for the home cook pdf download.


Let me reiterate that the science, safety, cooking time and temperature information make this book invaluable for the imaginative home cook. I've been using Doug's book for several years now and have yet to find another reference with so much detailed and technical info. After all, the guy has a PhD in applied math!!! I've read the negative reviews before buying and found them off-target.


I don't consider this a recipe book but a primer for the newbie who wants to understand the process and get involved with sous vide. If you want exotic recipes and food porn, then look at Thomas Keller's coffee table book. For an overview of basics, I haven't found another book which provides the same info.


He probably hurts his sales by having much of the info on his website, but that makes it even more convenient. This is a launching point A great starter for beginners! Not sure it's still in print as it seems more difficult to find new versions lately.


Maybe that say something about its utility and popularity!! Supreme for about 2 years now and I do love it! I bought a couple of books about I have had my Sous Vide Supreme for about 2 years now and I do love it! I bought a couple of books about Sous Vide cooking when I bought my Sous Vide and this book has definitely been my go-to book for cooking anything Sous Vide.


I have compared the "recipes" online but have always come back to the cooking instructions in this book. Highly recommend. Sets a good frame of reference. Great book for beginning Sous Viders!


Very easy recipes to follow and has good tips to follow. For a beginner, I was a little perplexed on why the times were not exact. I thought it was an exact science and while a lot of it is, sometimes you may want a softer meat that is broken down more and only get that with time. They pretty much all take the form: cook some meat, then put a sauce on it. There's no discussion of the results associated with different temperatures. Higher temperatures require a bit less cooking time, but that's not reflected in the charts, either.
